What began in a backyard shed has grown into one of Utrecht’s most heartfelt new bakeries. Bakkerij Mischa is the dream project of Gawan — a Utrecht-born chef who spent years cooking in (Michelin) restaurants before deciding to devote himself fully to one product: bread. Not just any bread, but slow-fermented, handcrafted, 100% sourdough made with organic flour and the kind of care you can taste in every bite.

When the opportunity came to take over the much-loved bakery Loaf, he didn’t hesitate. He renamed the shop after his second name, Mischa, refreshed the interior with help from his partner, and kept Loaf’s warm, homely spirit — while adding his own style and uncompromising approach to quality. Today, everything at Mischa is still made by hand, using high-quality, often organic ingredients, including flour sourced from the award-winning French mill used by prize-winning bakers in Paris.

Inside the bakery, you’ll find shelves filled with sourdough loaves, croissants, cruffins, danishes, focaccia sandwiches, and delicate patisserie. The coffee is excellent, the atmosphere is friendly and lived-in, and both indoor and outdoor seating make it easy to settle down with a cinnamon roll in the sun or take a quiet moment on the sofa.
